Ingredients

1 1/2 cups instant brown rice
4 green onions , divided
2 minced garlic cloves
3 1/2 cups water
2 eggs , lightly beaten
1/2 cup chopped fresh parsley , plus more
fresh parsley , for garnishing
1/3 cup grated romano cheese
2 cups dry whole grain breadcrumbs
1 container marinated fresh mozzarella balls in oil , drained and oil reserved ( 16 pieces )
28 ounces marinara sauce

Instructions

1.In a large saucepan, add rice, half of the green onions, garlic, and water. Bring to a boil then reduce heat, cover, and simmer for 20 minutes or until the rice is tender.
2.Stir in the egg, parsley, romano cheese, and remaining green onions. Let it cool completely.
3.Preheat the oven to 375°F. Grease a baking sheet with the reserved oil from the mozzarella.
4.Scoop rice mixture and form patties. Put a piece of mozzarella in the center then form into a ball. Roll each ball in the breadcrumbs until coated completely.
5.Place the balls on the prepared baking sheet. Bake in the preheated oven for 15-18 minutes or until golden and crispy.
6.In a small saucepan, heat the marinara sauce. Serve the arancini hot with marinara sauce and garnish with extra parsley.
