Ingredients

1 large onion , chopped
2 large carrots , thinly sliced

2 1/2 teaspoons chili powder ( I used Masterfoods Mexican Chilli Powder )
3/4 teaspoon ground cumin
3/4 teaspoon dry oregano leaves
1 large zucchini , diced
1 red bell pepper , chopped
1 cup corn kernel , fresh or frozen thawed
1 lb cooked chicken , chopped
1 cup salsa , your choice of flavour & heat
1 1/2 cups shredded monterey jack cheese ( I used cheddar cheese )
8 large flour tortillas
olive oil flavored cooking spray

Instructions

1.Preheat the oven to 425°F (220°C).

4.Add the zucchini, red bell pepper and corn; cook for 3-4 minutes or until the vegetables are tender.
5.Add the chicken and salsa, stir to combine; cook for 2-3 minutes or until heated through.
6.Remove from heat; stir in the cheese.
7.Spoon the chicken mixture onto the center of each tortilla.
8.Fold in the ends and roll up to enclose the filling.
9.Place the chimichangas seam-side down onto a baking tray.; spray with cooking oil.
10.Bake for 15-20 minutes or until golden brown and crispy.
11.Serve hot with sour cream and guacamole.
