Ingredients

2 eggs , beaten
1 tablespoon water
4 chicken breast fillets
200 g breadcrumbs

4 -6 garlic cloves , chopped

1 tablespoon capers
2 tablespoons tomato puree
4 aubergines , thinly sliced
200 g pitted black kalamata olives , in olive oil
200 ml red wine

Instructions

1.Preheat your oven to 200°C (400°F).
2.In a small bowl, mix the eggs and water together. In a separate bowl, mix the breadcrumbs and parmesan cheese.
3.Dip the chicken fillets into the egg mixture and then coat them with the breadcrumb mixture.
4.Heat the olive oil in a frying pan over medium heat. Fry the chicken until golden brown on both sides.

7.Add the chopped plum tomatoes, capers, tomato puree, and red wine to the pan. Season with black pepper and salt to taste, and cook until the sauce has thickened.
8.Pour the sauce over the chicken and mozzarella cheese in the baking dish. Lay the thinly sliced aubergines over the top and scatter the olives around the dish.
9.Bake in the preheated oven for 25-30 minutes, or until the aubergines are tender and the cheese is melted and golden brown.
