4 lbs lean stewing beef
3 medium onions , chopped
1/2 cup flour
2 tablespoons olive oil
6 garlic cloves , crushed

2 cups beef broth
1 cup beer
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
300 g mushrooms , halved

Instructions

1.Preheat oven to 350°F (175°C).
2.In a large bowl, coat the beef in flour then sprinkle with salt and pepper.
3.In a Dutch oven, heat the olive oil over medium-high heat. Add the beef and brown for 4-5 minutes per side. Remove the beef and set aside.
4.Add onions and garlic to the Dutch oven and cook for another 2-3 minutes.
5.Add brown sugar, red wine vinegar, parsley, thyme, beef broth, beer, Dijon mustard, Worcestershire sauce, and mushrooms to the Dutch oven. Mix gently and bring to a boil.
6.Return the beef back to the Dutch oven, mix well and cover with a lid. Now, place the Dutch oven in the oven and bake for 2-2 1/2 hours or until the beef is tender.
