Ingredients

3 slices pork fatback
1 medium onion , chopped
12 medium green bell peppers , chopped
1 tablespoon cooking oil
2 tablespoons flour
3 cups warm water
2 cups medium shrimp , peeled and deveined
salt and pepper
2 cups uncooked rice

Instructions

1.In a large pot, fry pork fatback over medium heat until brown.
2.Remove pork from pot and set aside.
3.In the same pot, fry onion and green bell peppers with cooking oil until they are tender.
4.Add flour to pot and stir well.
5.Gradually add warm water to the pot while continuously stirring.
6.Add in shrimp and pork to the pot, season with salt and pepper to taste.
7.Bring the mixture to a boil and then reduce heat; cover and let cook for 8-10 minutes.
8.Add uncooked rice to the pot, stir well, then let cook covered for 25-30 minutes; or until the rice is fully cooked.
9.Serve hot and enjoy!
