1 cup sugar
2 eggs
1/2 cup milk , 2 % is fine
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 lemon , rind of
1 lemon , juice of
1/4 cup sugar

Instructions

1.Preheat oven to 350°F (175°C).
2.Cream together margarine and 1 cup sugar until light and fluffy.
3.Add eggs one at a time, mixing well after each addition.
4.In a separate bowl, combine flour, baking powder, and salt.
5.Add the dry ingredients to the creamed mixture, alternating with milk, beginning and ending with the dry ingredients.
6.Stir in lemon juice and lemon rind.
7.Pour mixture into greased and floured 9x5 loaf pan.
8.Bake for 45-50 minutes or until toothpick inserted in centre of loaf comes out clean.
9.Combine 1/4 cup sugar and 1/4 cup lemon juice and pour over hot loaf.
10.Allow to cool for 10 minutes before removing from pan.
