1 cup seasoned bread crumbs ( approximately )
1 egg , beaten with a little milk using a fork
oil ( for frying , if not baking )

Instructions

1.Peel the hard-cooked eggs and set them aside.
2.In a shallow dish, mix the flour with salt and pepper to taste.
3.Divide the sausage meat into four portions.
4.With your hands, flatten and shape each portion into a thin round about 5 inches in diameter.
5.Place an egg on the meat and bring the sides of the meat up around the egg.
6.Roll each egg in the seasoned breadcrumbs, patting the breadcrumbs on all over to completely coat each egg.
7.Dip the coated eggs in the beaten egg mixture.
8.Heat the oil over medium heat in a large frying pan.
9.If not frying, preheat the oven to 375°F.
10.Fry or bake the eggs in medium heat for 15 - 20 minutes or until the sausage meat is browned and cooked through.
11.Serve hot or cold.
