Ingredients

1 tablespoon olive oil , divided
6 chicken thighs , skinned ( about 2 pounds )
3/4 teaspoon salt , divided
1/4 teaspoon black pepper
2 cups onions , chopped
3/4 cup carrot , cubed
3/4 cup celery , coarsely chopped
2 garlic cloves , minced
3/4 cup dry white wine
5 cups tomatoes , chopped ( about 2 pounds )
1 teaspoon dried basil
1 teaspoon dried rosemary
2 cups 1 % low-fat milk
1 can fat-free chicken broth
1 cup instant polenta , uncooked
3/4 cup fresh gruyere cheese , grated
1/4 teaspoon salt
3 tablespoons fresh parsley , chopped
2 teaspoons lemon rind , grated
1 garlic clove , minced
Osso Buco is an Italian dish traditionally made with veal shanks slow-cooked with vegetables, white wine, and spices. In this recipe, we use chicken thighs instead of veal shanks for a leaner version that’s still just as flavorful. Osso Buco-Style Chicken Thighs is a hearty and healthy dish that’s perfect for any night of the week. It’s a one-pan wonder that’s made with simple ingredients that you probably already have in your pantry, and it’s easy to customize to your taste. The chicken is seasoned with salt and pepper before being browned in a skillet and cooked with a homemade tomato sauce for 40 minutes. Instructions

1.Preheat oven to 375 degree Fahrenheit.
2.Heat a large skillet over medium-high heat. Add 1 tsp of oil.
3.Add chicken thighs, skin side down, and cook for 3 minutes or until browned. Turn and cook for 2 minutes more.
4.Remove chicken from the pan and sprinkle with 1/4 tsp salt and black pepper.
5.Add onions, carrot, and celery to the pan and sauté for 8 minutes or until tender. Add garlic and sauté for 1 minute.
6.Stir in wine, cook for 2 minutes or until reduced by half. Add tomatoes, basil and rosemary and bring to a boil.
7.Reduce heat and simmer for 10 minutes or until sauce thickens.
8.Return chicken to the pan with milk and chicken broth.
9.Cover pan and bake for 40 minutes or until chicken is cooked through.
10.Meanwhile, bring 3 cups of water to a boil in a saucepan. Add 1/4 tsp salt to the water. Gradually pour in the polenta, stirring constantly. Cook for 5 minutes and stir in cheese.
11.Combine parsley, lemon rind, garlic, and remaining 1 tsp of oil.
12.Serve chicken with polenta, tomato sauce and sprinkle with parsley mixture.
