Ingredients

2 whole veal shanks
to taste flour
4 tablespoons butter
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup celery , finely chopped
1/2 cup carrot , finely chopped
1 medium onion , finely chopped
1 clove garlic , minced
1/2 cup mushroom , minced
1/2 teaspoon sage , crumbled
1/2 teaspoon rosemary
1 large tomatoes , peeled , seeded and chopped ( ripe )
2 cups white wine
1 lemon , rind of , grated
2 tablespoons parsley , chopped
1 anchovy , mashed ( optional )
6 cups rice , cooked

Instructions

1.Preheat oven to 375°F (190°C).
2.Sprinkle the veal shanks with flour, shaking off the excess.

5.Add celery, carrot, onion, garlic, mushroom, sage, and rosemary to the same pan used to cook the veal and sauté until onion is transparent.
6.Add tomato and white wine, reduce heat, and simmer for 10 minutes or until the liquid is reduced.
7.Pour the tomato mixture over the veal shanks, then add lemon rind and anchovy, if desired.
8.Cover and bake for 2 hours or until tender.
9.Garnish with parsley and serve with cooked rice.
