Ingredients

150 g masoor dal ( red gram split lentils )
2 tablespoons tamarind pulp
4 green chilies , washed and sliced
1/2 teaspoon turmeric powder
2 tablespoons jaggery , grated
2 tablespoons peanuts , roasted
1 tablespoon cooking oil
salt
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seed
1 pinch asafoetida powder ( hing )
1/4 teaspoon fenugreek seeds
6 -8 curry leaves
3 -5 sprigs fresh coriander leaves , to garnish ( cleaned , washed and chopped )
Osaman (Gujarati Dal) is a traditional Indian dish that is popular in the western state of Gujarat. It is similar to the popular dal, but with a tangy twist that comes from the addition of tamarind pulp. The dish is easy to prepare and can be made with basic ingredients that are readily available in any household. The use of different spices like mustard seeds, cumin seeds, fenugreek seeds and asafoetida powder gives it a unique flavor and aroma that sets it apart from other Indian lentil dishes. Instructions

1.Rinse the masoor dal under running water and soak for 10-15 minutes.
2.In a pressure cooker, add the dal along with 2-3 cups of water, turmeric powder and a pinch of salt. Pressure cook for 2-3 whistles or until the dal is cooked.
3.In a separate pan, heat oil and add mustard seeds, cumin seeds, fenugreek seeds and asafoetida powder. Once the seeds start spluttering, add green chilies and curry leaves and stir for a minute.
4.Now, add the cooked dal to the pan and mix well. Add tamarind pulp, jaggery and peanuts and let it simmer for 5-10 minutes.
5.Serve hot and garnish with fresh coriander leaves.
