Instructions

1.Preheat oven to 450°F.
2.Roast the red and yellow bell peppers on a baking sheet for 15-20 minutes or until blackened.
3.Remove stems, seeds, and skin from peppers and cut into pieces.
4.Heat olive oil in a large skillet over medium heat. Cook onion and garlic until onion is translucent, stirring occasionally, about 6 minutes.
5.Add orzo pasta, broth, the roasted bell peppers, black olives, chopped pimento stuffed olives, salt, and black pepper to the skillet. Bring to a boil, then reduce heat, cover, and simmer until the orzo is tender and the liquid has been absorbed, about 15-20 minutes.
6.Remove from heat and add goat cheese, stirring until cheese is melted and mixture is creamy. Serve hot and garnish with pimento stuffed olives, black olives, and fresh parsley leaves.
