Ingredients

1 tablespoon extra-virgin olive oil
1/4 lb bacon , finely chopped
8 garlic cloves , minced
1 small onion , finely chopped
1 small red bell pepper , finely chopped
12 chili peppers , seeded and finely chopped ( aji dulce or 3 Italian frying peppers )
4 scallions , white and light green parts , finely chopped
1 medium leek , white and light green part , finely chopped
1 celery rib , with leaves finely chopped
1 tablespoon chopped cilantro , plus 3 cilantro sprigs
1 tablespoon chopped flat leaf parsley
one 15 1/2-ounce can red kidney beans , drained and rinsed
2 cups long-grain rice , rinsed well and drained
4 cups water

Instructions

1.In a large pot, heat the olive oil over medium heat.
2.Add the bacon and cook until crisp, then remove from the pot with a slotted spoon and set aside.
3.In the same pot, sauté the garlic, onion, and red pepper until they soften, about 5 minutes.
4.Add the chili peppers, scallions, leek, and celery, and sauté for another 5 minutes.
5.Stir in the cilantro, parsley, and kidney beans and cook for 2-3 minutes.
6.Add the rice, water, and salt to the pot and bring to a boil.
7.Reduce the heat to low and cover the pot with a tight-fitting lid.
8.Simmer for 20 minutes, or until the rice is tender and the liquid has been absorbed.
9.Remove the pot from heat and let it sit covered for 5 minutes.
10.Fluff the rice with a fork, then stir in the reserved bacon.
11.Garnish with cilantro sprigs and serve hot.
