Ingredients

1 1/2 lbs boneless sirloin , cut into thin strips
1 red bell pepper , chopped
3 garlic cloves , minced
3 carrots , chopped
2 tablespoons rice vinegar
1/4 cup tomato sauce
1/4 cup sherry wine

1 tablespoon sugar
2 tablespoons chopped peanuts
12 ounces cooked vermicelli

Instructions

1.In a small bowl, mix together the rice vinegar, tomato sauce, sherry wine, oyster sauce, sugar and 1/4 cup of water.
2.Spray a slow cooker with cooking spray and add in the beef strips, bell pepper, garlic and carrots. Pour the sauce over the top of everything.
3.Cover the slow cooker and cook on high for 3-4 hours or low for 6-8 hours.
4.When the meat is tender, cook the vermicelli according to package instructions.
5.Serve the beef and vegetable mixture over the vermicelli and top with chopped peanuts.
