Ingredients

1 1/2 kg butterflied leg of lamb
3 tablespoons oregano ( fresh chopped )
3 garlic cloves ( thinly sliced )
2 red chilies ( small finely chopped )
3 tablespoons lemon juice ( fresh )
2 tablespoons white wine vinegar
6 dinner rolls ( small wholegrain or small baquette or gluten free bread to serve )
1 corn on the cob ( husk and silk removed )
120 g salad leaves ( mixed 8 cups )
2 carrots ( cut into thin rounds )
30 g walnuts
1 tablespoon balsamic vinegar
1 tablespoon lemon juice ( fresh )
2 teaspoons coarse grain mustard ( or gluten-free wholegrain mustard )
black pepper ( to taste freshly ground )
20 g parmesan cheese ( shavings )
This Oregano and Chilli Lamb With Corn and Parmesan Salad recipe is a perfect dish for a dinner party or a family gathering. Instructions

1.Preheat the oven to 200C/180 fan-forced (400F).
2.Mix the oregano, garlic, chili, lemon juice, and vinegar in a bowl to combine.
3.Place the lamb in a shallow baking dish; cut 2cm-deep slits all over the lamb using a sharp knife. Spoon over the oregano mixture and rub it into the slits.
4.Roast lamb for 20 minutes for medium-rare or until cooked to your liking. Cover the tray with aluminium foil; rest for 10 minutes.
5.Meanwhile, place bread rolls in the oven with the lamb and let them become warm and lightly toasted.
6.Heat a chargrill or barbecue grill on high. Grill the corn for 10 minutes or until cooked through and starting to colour. Remove the kernels and combine with salad leaves and carrot rounds in a large bowl. Add the walnuts, lemon juice, balsamic vinegar, coarse grain mustard and black pepper, and toss to combine.
7.Place the salad on a large platter or in a large salad bowl; top with the parmesan shavings.
8.Slice lamb thinly and serve with salad and warm bread rolls.
