Ingredients

1 1/2 cups shelled fresh peas or 1 1/2 cups frozen peas
2 tablespoons extra virgin olive oil
1 medium onion , minced
1 cup ricotta cheese , preferably homestyle
1/3 cup freshly grated parmigiano-reggiano cheese
salt
fresh ground black pepper
1 lb orecchiette ( or small shell pasta )
Orecchiette with peas, ricotta, and parmesan is a tasty and comforting pasta dish. Orecchiette is a type of pasta that resembles a small ear, hence the name which means 'little ears' in Italian. This pasta shape is ideal for holding sauces and small vegetables, making it perfect for rich and creamy dishes like this one. Instructions

1.Bring a large pot of salted water to boil.
2.While the water boils, heat the olive oil in a large skillet over medium heat.
3.Add the minced onion and sauté until it’s soft but not browned, about 2-3 minutes.
4.Add the peas and continue to sauté until they are heated through, about 2 more minutes.
5.In the meantime, cook the orecchiette according to the package instructions.
6.Reserve 1 cup of pasta cooking water and then drain the pasta.
7.Toss the pasta with the peas and onions and then add the ricotta and parmesan cheese.
8.Use the reserved pasta cooking water to achieve a creamy consistency.
9.Salt and pepper to taste and serve.
