Ingredients

36 ounces cherry tomatoes , on the vine , cut in half
1 package Italian chicken sausage ( use 3-5 links to your taste , I use 3 )
4 ounces pancetta , pre-chopped
1 small onion , minced
3 garlic cloves , minced
2 tablespoons unsalted butter
1 tablespoon extra virgin olive oil
1/3 cup red wine
1 package cremini mushrooms , sliced
3 tablespoons fresh basil , chopped
2 tablespoons fresh oregano , chopped
1 cup Baby Spinach , chopped
salt
1 package orecchiette ( or small shells if you ca n't find Orecchiette )

Instructions

1.Heat a large skillet over medium-high heat.
2.Add the Italian chicken sausage and cook, breaking it into small pieces with a wooden spoon, until browned, about 5-7 minutes.
3.Remove sausage from the pan and set aside.
4.In the same pan, add the pancetta and cook until crisp, about 5-7 minutes.
5.Add the onion and garlic and cook until softened, about 2-3 minutes.
6.Stir in the butter and olive oil and cook until the butter has melted.
7.Add the tomatoes and cook until they begin to release their juices, about 10 minutes.
8.Pour in the red wine, add the mushrooms, basil, oregano, and baby spinach, and stir well.
9.Bring the sauce to a simmer and cook for another 10-15 minutes, or until the mushrooms are tender and the flavors have melded together.
10.Meanwhile, bring a large pot of salted water to a boil.
11.Add the orecchiette and cook until al dente, according to package instructions.
12.Drain the pasta and add it to the skillet with the sauce.
13.Toss the pasta with the sauce until everything is well combined.
14.Serve with grated parmesan cheese on top.
