6 chicken thighs , boneless and skinless , trimmed ( about 1 1/2 pounds )
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 1/4 teaspoons ground cinnamon , divided
1 1/4 teaspoons ground cumin , divided
2 tablespoons olive oil , extra-virgin , divided
1 medium onion , thinly sliced
1 can diced tomatoes , with juice
1 can chickpeas , rinsed
1 cup reduced-sodium chicken broth
4 tablespoons cilantro , fresh , chopped and divided
1 orange , scrubbed , halved and cut into 1/4-inch slices
1 cup whole wheat couscous

Instructions

1.Preheat the oven to 375°F.

7.Stir in tomatoes with juice, chickpeas, chicken broth, 3 tbsp cilantro, orange slices, 1/4 tsp salt and 1/4 tsp black pepper.
8.Nestle the chicken into the sauce.
9.Cover the pot and transfer it to the oven.
10.Bake for 25 minutes.
11.Meanwhile, prepare couscous according to package directions.
12.Fluff couscous with a fork and stir in 1/4 tsp cinnamon and 1/4 tsp cumin.
13.Sprinkle the remaining cilantro over the chicken and serve with couscous.
