3 1/2 lbs center-cut beef tenderloin , trimmed , tied
1 medium orange , zest of
1 teaspoon sugar
2 tablespoons dark soy sauce
1 tablespoon sake
2 tablespoons olive oil , can use vegetable oil , divided
1/4 cup water

Instructions

1.Preheat oven to 350°F.

5.Spoon soy mixture over beef, turning to coat. Add water to skillet, and transfer to oven. Roast until a meat thermometer inserted into thickest portion registers 130°F (about 20 minutes for medium-rare).
6.Remove from oven, and let stand for 10 minutes. Cut crosswise into thin slices, and serve with pan juices.
