1 tablespoon baking powder
1/2 teaspoon salt

1 cup brown sugar
1 1/2 cups raisins
2 whole oranges , washed quartered and seeded
1 cup buttermilk
1/2 cup canola oil
2 eggs

Instructions

1.Preheat the oven to 350°F (175°C) and line muffin tin with paper liners.

3.Add raisins and oranges to a food processor, and process until orange mixture is chopped into tiny pieces.
4.In a separate bowl, whisk together buttermilk, canola oil, and eggs.
5.Add orange mixture to the dry ingredients, stir and then add wet ingredients, stir until combined.
6.Divide the batter evenly into muffin cups, and bake for 25-30 minutes, or until a toothpick inserted in the center of the muffin comes out clean.
