Ingredients

2 eggs
4 egg yolks
3/4 cup caster sugar ( superfine sugar )
2 tablespoons cornflour ( corn starch )
1 teaspoon ground cardamom
4 oranges , juice and rind of , finely grated
2 lemons , rind and juice of , finely grated
125 g butter , cubed
2 sheets ready rolled shortcrust pastry , thawed

Instructions

1.Preheat oven to 180C/350F.
2.In a mixing bowl, whisk together eggs, egg yolks, caster sugar, cornflour and ground cardamom until smooth.
3.Add in the orange and lemon juice and grated rinds and whisk until well combined.
4.In a saucepan, melt the cubed butter over low heat and add it to the egg mixture while whisking constantly.
5.Roll out the pastry on a lightly floured surface and line a 25cm tart tin.
6.Pour the filling into the tart and bake for 35-40 minutes until golden.
7.Let the tart cool to room temperature before serving.
