400 g kumara , peeled and cut into 2cm pieces
2 teaspoons orange rind , finely grated
185 g tuna in water , drained and flaked
80 g baby rocket
300 g oranges , peeled and segmented
2 tablespoons orange juice
1 tablespoon light soy sauce
1/2 small red onion , sliced thinly

Instructions

1.Preheat the oven to 200C/180C fan-forced.
2.Arrange kumara in a single layer on a baking paper-lined oven tray.
3.Sprinkle kumara with half the rind, lightly spray with oil and season with freshly ground black pepper.
4.Roast kumara for 25 minutes, or until tender and golden.
5.Remove from the oven and cool.
6.Combine the tuna, rocket, oranges and onion in a bowl.
7.Whisk together the orange juice, soy sauce and remaining rind in a small jug.
8.Drizzle dressing over the tuna salad and toss gently to combine.
9.Serve tuna salad with the roasted kumara.
