4 lbs caribou roast

Instructions

1.Preheat oven to 325°F.
2.Rub the caribou roast with oil, salt, and pepper.

4.Heat a skillet on medium high heat and sear the roast on all sides until a crust develops.
5.Transfer the roast to a roasting pan and pour the orange juice mixture over the roast.
6.Cover with foil and roast for 1 hour.
7.Meanwhile, in a separate pan, melt butter on medium heat.
8.Add orange juice, brown sugar, currant jelly, and Angostura bitters.
9.Reduce heat and cook until jelly is dissolved and sauce is thick enough to coat the back of a spoon, about 10-15 mins
10.Remove foil from the roast, and brush the orange sauce over the roast.
11.Roast until internal temperature reads 140°F.
12.Remove from oven and let rest for 10-15 minutes before carving.
