Ingredients

3/4 cup plain flour
1/4 teaspoon salt
3/4 cup water
6 tablespoons unsalted butter
3 eggs
1 cup cream
3 tablespoons Cointreau liqueur
1 orange , zest of
1 tablespoon caster sugar
50 g chocolate ( optional )
Originating in France, profiteroles are a classic dessert that consists of a light and airy pastry shell filled with various sweet fillings. In this recipe, we add a citrus twist to the traditional French dessert, by filling the profiteroles with a luxurious orange cream. With the perfect combination of sweet and tangy flavors, this dish is bound to become a family favorite. It's perfect for special occasions or a dinner party dessert. Instructions

1.Preheat the oven to 200C. Line two baking trays with baking parchment.
2.Sift the flour and salt onto a sheet of baking parchment.
3.Put the water and butter in a medium saucepan and heat gently until the butter has melted. Increase the heat and let the mixture come to a rolling boil. Add the flour and salt mixture all at once and beat vigorously with a wooden spoon until the mixture comes away from the sides of the pan and forms a smooth ball. Let cool for 3-4 minutes.
4.Beat in the eggs one at a time, beating well between each addition until the mixture is glossy and thick.
5.Divide the mixture into 12 equal portions and spoon onto the baking trays, spacing them well apart. Bake for 20-25 minutes until golden brown and puffed up. Leave to cool on a wire rack.
6.Whip the cream until it holds soft peaks. Add the Cointreau, orange zest and sugar and mix gently.
7.Halve the profiteroles and fill generously with the cream.
