This Orange-Beet Cake is a flavorful dessert or breakfast dish with a unique color and taste. The cake is made with grated beets, fresh orange juice, raisins, and warm spices. It's a healthier alternative to traditional cakes and baked goods. The beets add a distinct earthy taste and a beautiful pink color to the cake. It can be enjoyed alone or with whipped cream or frosting. Serve it warm or cool, as a special treat or a morning indulgence.

Instructions

1.In a small saucepan, heat the raisins and orange juice together over medium heat. Cook for 3-4 minutes, or until the raisins have absorbed the majority of the juice. Remove the pan from the heat and allow to cool.
2.In a medium-sized mixing bowl, whisk together the all-purpose flour, whole wheat pastry flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
3.In a separate large mixing bowl, beat the egg yolks together. Add the vegetable oil, orange zest, vanilla, and brown sugar to the yolks, whisking until thoroughly combined. Add the plain low-fat yogurt, raisins, and grated beets, stirring to mix well.
4.Using a stand mixer or electric hand mixer, beat the egg whites until stiff peaks form. Gradually fold the white sugar into the egg whites to form a meringue.
5.Gently fold the dry ingredients into the beet batter mixture. Once combined, carefully fold in the meringue.
6.Preheat your oven to 350F/175C. Spray a 9x13-inch baking dish with cooking spray. Pour the beet cake batter into the prepared dish. Bake in the preheated oven for 30-35 minutes or until it passes the toothpick test in the center. Remove from the oven and let cool for 15 minutes before serving. Enjoy!
