Ingredients

3/4 cup orange juice
3 tablespoons reduced sodium soy sauce
1 cup honey
1 tablespoon cornstarch

1 lb flank steak , cut across the grain into thin strips
2 tablespoons peanut oil or 2 tablespoons canola oil
2 cups asparagus , cut into 1 1/2-inch pieces
1 red bell pepper , cut into strips
1/2 cup sliced scallion
1 cup shredded carrot
2 teaspoons grated fresh ginger
1 teaspoon minced garlic
1/2 cup honey-roasted peanuts
steamed rice ( optional )

Instructions

1.Combine orange juice, soy sauce, honey, cornstarch, and chili oil in a bowl. Stir well.
2.Pour half of the sauce into a separate bowl and marinate beef strips in it for about 10 minutes.
3.Heat peanut oil in a wok over high heat. Stir-fry beef until it is browned in color.
4.Remove the beef from the wok and set aside.
5.Add the asparagus, bell pepper, scallion, carrot, ginger, and garlic to the wok. Stir-fry the vegetables for about 3 minutes, or until they are tender.
6.Add the beef strips back to the wok and pour in the rest of the sauce. Stir well and cook for about 2-3 minutes, or until the sauce is thickened to your desired consistency.
7.Sprinkle the honey-roasted peanuts over the top and serve with steamed rice if desired.
