Ingredients

6 lamb steaks
1 leek , sliced
1 1/2 cups orange juice
1/4 cup oil
2 tablespoons fresh rosemary , chopped
2 tablespoons white rum
2 tablespoons honey

Instructions

1.Preheat your oven to 220C/425F.
2.Combine orange juice, oil, rum, honey and rosemary in a jug and stir to combine.
3.Season lamb steaks with salt and pepper, then place them and sliced leek in a baking dish.
4.Pour the orange mixture over the lamb and leek and rub all over the steaks.
5.Bake steaks in the dish in the preheated oven for 10-15mins, or until the steaks and leek caramelise.
6.Lower the oven temperature to 180C/356F and cook for a further 15-20mins or until the steaks are cooked to your liking.
7.The lamb's internal temperature when cooked to medium should be 57-60C (135-140F).
8.Rest the lamb for a few minutes before cutting across the grain into thick slices.
9.Serve with your desired sides.
