Ingredients

1 cup hot water
1/4 cup tahini
3 tablespoons fresh lemon juice

1/2 cup chopped fresh parsley

2 cans chickpeas , drained
4 garlic cloves , minced
1/2 cup dry breadcrumbs , divided
4 teaspoons olive oil , divided
6 mini pita pockets ( about 5 inches wide )
3 cups chopped romaine lettuce
2 cups chopped tomatoes
2 cups sliced peeled cucumbers
1/2 cup finely chopped red onion
Falafel burgers are a tasty and healthy alternative to traditional beef burgers. This vegetarian dish is made with flavorful chickpea patties, fresh vegetables, and a tangy tahini sauce. Instructions

1.Preheat the oven to 375 F.
2.In a small bowl, whisk together the hot water, tahini, 3 tablespoons lemon juice, and 1/8 teaspoon salt until smooth. Set aside.
3.Add the garlic, chopped onion, parsley, 2 tablespoons lemon juice, cumin, coriander, and 1/2 teaspoon salt to a food processor. Pulse until well combined.
4.Add the chickpeas and 4 minced garlic cloves to the food processor and pulse until almost smooth.
5.Add 1/4 cup of the breadcrumbs to the food processor and pulse to combine.
6.Using your hands, form 6 patties and then place them on a baking sheet.
7.Drizzle the patties with 2 tablespoons of olive oil and then bake in the preheated oven for 25-30 minutes, flipping them halfway through cooking.
8.To assemble the burgers, take a mini pita pocket and place a patty inside. Then top with chopped romaine lettuce, tomatoes, cucumbers, and red onion. Drizzle with the tahini sauce and sprinkle with the remaining breadcrumbs.
