Ingredients

1 medium tomatoes , chopped , about 2/3 cup
2 teaspoons snipped fresh basil
1/8 teaspoon salt
2 medium fresh portabella mushrooms , each about 4 inches in diameter
1 teaspoon balsamic vinegar or 1 teaspoon red wine vinegar
1/2 teaspoon olive oil
1/2 loaf focaccia bread , quartered or 1/2 Italian bread , such as boboli brand
finely shredded parmesan cheese ( optional )
Open-Face Portabella Sandwiches are a twist on the classic sandwich that we all know and love. They are incredibly easy to make and are a great way to add vegetables to your diet. This sandwich is perfect for lunch or a light dinner, and the mushroom caps make it quite filling. Another thing to love about this recipe is the simplicity of the ingredients. Apart from the portabello mushrooms, all the other ingredients can be easily found in any grocery store.

Instructions

1.Preheat oven to 400°F.
2.In a small bowl, mix together tomatoes, basil and salt. Set aside.
3.Remove stems and gills from the mushroom tops. Using a spoon or knife, scrape out the gills and discard. Rinse the mushrooms caps and pat them dry with paper towel.
4.Place the mushroom caps in a baking dish, gill-side up. Drizzle each mushroom with 1/4 teaspoon balsamic vinegar and 1/8 teaspoon olive oil.
5.Bake for 12-15 minutes, or until the mushrooms are tender but still firm.
6.Cut the focaccia or Italian bread into quarters and place them on a baking sheet. Broil them for a minute or two until they are lightly toasted.
7.Spoon the tomato mixture over the toasted bread. Place one mushroom cap on each piece of bread and sprinkle with Parmesan cheese, if desired.
