Ingredients

5 sun-dried tomatoes ( not oil-packed )
2 teaspoons olive oil
1 1/2 cups red onions , chopped
2 teaspoons garlic , minced
1 1/4 lbs extra- lean ground turkey
8 ounces Italian turkey sausage
1 cup zucchini , grated and loosely packed
1 jar pasta sauce ( I use Classico )
1 can stewed tomatoes , undrained and chopped
1 tablespoon dried Italian seasoning
1 tablespoon balsamic vinegar
1 tablespoon brown sugar
1/4 teaspoon ground black pepper
1/4 cup fresh basil leaf , minced
2 cups light ricotta cheese
2 ounces feta cheese with herbs , crumbled
1 package frozen spinach , thawed , squeezed dry and chopped
1 large egg
12 whole wheat lasagna noodles
1 1/2 cups mozzarella cheese , packed ( Use a 3 or 4-cheese blend if available )

Instructions

1.Preheat your oven to 375°F.

6.Bring the mixture to a boil for a minute or two and then reduce the heat to a low simmer. Let everything simmer together for 20 minutes. Stir occasionally.
7.In a separate bowl, mix together the light ricotta cheese, feta cheese, thawed and squeezed dry frozen spinach, and a large egg until you have a well-combined mixture.
8.Boil the lasagna noodles in boiling water following the instructions on the package. Rinse with cold water.
9.Once the lasagna noodles and meat sauce are ready, it is time to assemble the dish in a 13x9 inch baking dish.
10.Start by spreading a layer of the meat sauce on the bottom of the dish. Then lay down lasagna noodles to cover the layer. Add another layer of meat sauce, then a layer of the cheese mixture. Repeat this process layer by layer until you've used up all your ingredients. Top with the shredded mozzarella cheese.
11.Cover the dish with foil and bake it in the oven for 25 minutes.
12.Remove the foil and bake the dish uncovered for another 25 minutes until the cheese is melted and the lasagna is hot and bubbly. Let it cool for 10 minutes before serving.
