Ingredients

2 lamb loin chops , trimmed and tied at 1-inch intervals
1 cup fine breadcrumbs
1/3 cup extra virgin olive oil
1 tablespoon fresh ginger , minced
1 tablespoon of fresh mint , minced
2 teaspoons seasoning salt ( or Emeril Essence )
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
saskatoonberry chutney
2 tablespoons vegetable oil
1 cup onion , chopped
1/2 cup green bell pepper , chopped
2 teaspoons garlic , minced
1 jalapeno pepper , seeds and stem removed , minced
2 teaspoons fresh ginger , minced
1 teaspoon turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
3 cups fresh saskatoon berries , rinsed and drained ( about 2 pints )
1/4 cup brown sugar , plus
1 tablespoon brown sugar
1/4 cup balsamic vinegar ( or apple cider vinegar )
1/4 cup of fresh mint , minced
Ontario Lamb Loin with Saskatoon Berry Chutney is a delicious main dish that combines the tender and juicy meat of Ontario lamb with a tangy, sweet saskatoon berry chutney. The lamb is coated with a breadcrumb and spice mixture and then seared and roasted to perfection, while the chutney is cooked with aromatic spices, ginger, and fresh mint to add extra layers of flavor. Instructions

1.Preheat the oven to 400°F.
2.Combine breadcrumbs, spices, ginger, and mint in a bowl and mix well.
3.Heat olive oil in an oven-safe skillet over medium-high heat.
4.Coat the lamb chops in breadcrumb mixture, pressing them firmly so the mixture sticks to the lamb.
5.Place the lamb chops in the skillet and cook for 2 to 3 minutes.
6.Turn the lamb chops and cook for another 2 minutes.
7.Place the skillet in the oven and bake for 7 to 10 minutes depending on the preferred doneness.
8.In a separate skillet, heat vegetable oil over medium heat and cook onion, green bell pepper, garlic, jalapeno pepper, ginger, turmeric, cinnamon, salt, and red pepper flakes for 1 to 2 minutes.
9.Add saskatoon berries, brown sugar, and balsamic vinegar to the skillet. Stir well.
10.Bring to a boil, then reduce heat and let simmer for about 8 to 12 minutes until the chutney is thickened. Stir occasionally.
11.Once thickened, remove from heat and add fresh mint.
12.Serve the lamb chops with the saskatoon berry chutney.
