Ingredients

8 medium onions , thinly sliced
coarse salt
5 cups chicken stock ( I use a pareve mix to keep this recipe kosher )
1/2 cup freshly grated parmigiano
5 black peppercorns
3 white peppercorns
3 coriander seeds
1 pinch freshly grated nutmeg
1 clove garlic
4 slices dry crusty bread

Instructions

1.In a large pot, melt the butter with 2 tablespoons olive oil over medium heat.
2.Add the thinly sliced onions and a pinch of salt. Cook, stirring frequently until the onions are caramelized and browned, about 30-40 minutes.
3.Add the chicken stock and bring to a boil. Reduce the heat and simmer for 20 - 25 minutes.
4.Meanwhile, in a mortar and pestle or spice grinder, grind the black peppercorns, white peppercorns, coriander seeds, and garlic into a paste.
5.Add the spice paste and nutmeg to the soup and stir to combine.
6.Preheat the oven to 375°F. Brush the bread slices with olive oil and place them on a baking sheet. Toast in the oven until golden-brown, about 10 minutes.
7.Ladle the soup into bowls and top each with a slice of toasted bread and a sprinkling of freshly grated parmigiano cheese.
8.Serve hot and enjoy!
