Instructions

.Preheat the oven to 425°F.
.In a saucepan, mix together the sliced onions, chicken broth, and champagne vinegar. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low and simmer for 10 minutes.
.Strain the onion mixture through a fine mesh sieve into another saucepan and place it back on the stove over medium-high heat. Add the heavy cream and whisk to combine. Cook for 5 minutes, then remove the pan from the heat and let it cool.
.Season the salmon fillets with salt and pepper on both sides. Set up a breading station with flour in one shallow bowl, beaten egg in another, and crushed onions in a third. Dip each salmon fillet first into the flour, then into the egg, and finally into the crushed onions.
.In a large skillet, heat the peanut oil over high heat until it begins to shimmer. Add the salmon fillets skin-side down and cook for 2-3 minutes, until the crust is golden brown.
.Transfer the salmon fillets to a baking sheet lined with parchment paper and bake for 5-7 minutes, until the salmon is cooked to your desired doneness.
.Using a spoon, top each salmon fillet with a dollop of black caviar and some of the creamed onion sauce. Serve immediately.
