Ingredients

2 -3 chilies , minced ( to taste )
1 red pepper , diced
1 can chopped tomatoes
1/4 cup water
2 garlic cloves , finely chopped
2 tablespoons soft brown sugar
1 1/2 tablespoons cider vinegar
1 cup all-purpose flour
1/4 cup water
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon ground turmeric
1 teaspoon ground cumin
2 eggs , beaten
1 cup fresh cilantro leaves , chopped
4 onions , sliced very thinly
oil ( for deep frying )

Instructions

1.In a medium saucepan, add the chilies, red pepper, chopped tomatoes, water, finely chopped garlic, soft brown sugar and cider vinegar.
2.Bring the tomato sauce to a boil then reduce to a simmer, stirring occasionally for 20 minutes.
3.In a large mixing bowl, add the flour, water, baking powder, salt, chili powder, ground turmeric, ground cumin, beaten eggs and chopped cilantro leaves.
4.Add the sliced onions to the mixing bowl and mix well so the onions are coated with the spice batter.
5.Heat the oil in a large skillet or wok over high heat, until hot and starting to smoke.
6.Drop spoonfuls of the onion mixture into the hot oil to deep-fry in batches, for 2-3 minutes or until golden brown.
7.Drain the bhajis on paper towels and serve hot with the spicy tomato sauce.
