Ingredients

1 tablespoon olive oil
8 ounces smoked ham , cut in 1/2-inch cubes
2 cups chopped onions
1 cup chopped red bell pepper
1/4 teaspoon saffron , threads crumbled
1/4 teaspoon spanish hot paprika
3 1/4 cups reduced-sodium chicken broth , divided
1 1/2 cups arborio rice
1 lb uncooked peeled and deveined large shrimp
1/2 cup pimento stuffed olive , halved
Paella is a Spanish dish that is traditionally made with rice, saffron, and seafood. It's a classic dish that has gained popularity all over the world. Instructions

1.Preheat oven to 400°F (200°C).
2.Heat olive oil in a large ovenproof skillet over medium-high heat. Add cubed smoked ham and cook for 3-4 minutes or until golden brown. Remove from the skillet and set aside.
3.Add in chopped onions and red bell pepper to the same skillet and cook for 5 minutes or until softened. Add in crumbled saffron threads and Spanish hot paprika and cook for 1 minute.
4.Pour in 3 cups of chicken broth and stir in Arborio rice. Bring it to a boil, then reduce heat to low, and let it simmer for 10-15 minutes or until the liquid is absorbed and rice is tender. If needed, add the remaining 1/4 cup of chicken broth.
5.Add the uncooked peeled and deveined large shrimp to the skillet and arrange them over the rice. Scatter halved pimento-stuffed olives on top as well.
6.Transfer the skillet to the oven and bake for 10-15 minutes or until the shrimp is cooked through.
7.Remove from the oven, let it rest for 5 minutes, and serve hot.
