1 packet Marie biscuits
150 g margarine
1 can condensed milk
1 cup lemon juice ( freshly squeezed )
6 large egg yolks
2 egg whites ( from seperated eggs )
2 tablespoons white sugar

Instructions

1.Preheat oven to 180C.
2.Blend Marie biscuits in a food processor until fine crumbs form.

5.Bake for 15 minutes or until golden, set aside to cool.
6.In a bowl, whisk together condensed milk and egg yolks until well combined.
7.Add lemon juice and continue to whisk until mixture thickens.
8.Spoon mixture into cooled biscuit base.
9.Beat egg whites until soft peaks form.
10.Gradually add sugar while continuing to beat until mixture is glossy.
11.Spoon egg white mixture over the lemon filling and bake for 10-15 minutes or until meringue is golden brown.
12.Leave to cool, then chill in the fridge for 1-2 hours before serving.
