Ingredients

2 tablespoons ground flax seeds
1 tablespoon salba seeds
1/3 cup hot coffee
1/4 cup spelt natural bran
1/4 cup diced dates , soaked in hot water and drained
1/3 cup hot water
1 cup frozen chopped kale ( I used Cookin ' Greens kale )
2 packets Xylitol sweetener or ( 1 g ) packets stevia
1 tablespoon vanilla
1/4 cup canola oil
1/4 cup brown sugar
1 1/4 cups buttermilk
1 cup spelt flour
3/4 cup flour
1/2 cup sifted cocoa powder
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup bittersweet chocolate chips
1/2 cup chopped walnuts

Instructions

1.In a bowl, mix together the ground flax and salba seeds with hot coffee and natural spelt bran. Let sit for 10 minutes.
2.In another bowl, mix together the soaked dates with hot water until they become a thick paste. Add the frozen chopped kale, Xylitol sweetener or stevia, vanilla, canola oil, brown sugar, and buttermilk. Mix well.
3.Combine the spelt flour, flour, sifted cocoa powder, baking powder, baking soda, and salt. Stir gently and add to the wet mixture. Mix until just combined.
4.Fold in the bittersweet chocolate chips and chopped walnuts.
5.Preheat oven to 375F. Line 12 muffin cups with paper liners, and divide the batter evenly among them.
6.Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool on a wire rack before serving.
