Instructions

1.Preheat oven to 375°F.

4.Dissolve baking soda in 1 tablespoon of hot water and add to the mixture.
5.Gradually add flour, 1 cup at a time, until dough forms and is stiff enough to roll out.
6.On a lightly floured surface, roll out dough to desired thickness for gingerbread houses, people, or cookies.
7.Cut into desired shapes, place on a greased baking sheet, and bake for 10-15 minutes, or until golden brown.
8.While gingerbread cools, beat egg whites until frothy. Gradually add icing sugar, while continuing to beat, until stiff peaks form.
9.Once gingerbread is cooled, decorate with icing and white sugar as desired.
