Olliebollen Dutch Doughnuts, also known as the Dutch New Year Doughnuts, are a traditional pastry commonly eaten on New Year's Eve in the Netherlands. The doughnuts are circular with a crisp exterior and a soft, fruity interior. They are often served hot and topped with icing sugar or sugar-cinnamon mixture. The doughnuts are thought to have originated in the early Dutch Empire, where they are a popular street food and festival treat. The name Oliebollen translates to 'oil balls' in Dutch, which refers to the deep-frying process used to cook them.

Instructions

1.In a saucepan, heat the milk until it's just lukewarm. Add butter and sugar to it and stir until they dissolve. Mix the yeast into the lukewarm water and whisk until it dissolves.
2.In a bowl, blend flour, salt, cinnamon, and lemon peel. Add yeast water to the mixture of milk and butter and beat together.
3.Gradually add the dry ingredients to the mixture of liquids to form a dough. Knead it well for about 5 minutes in the bowl to ensure a smooth texture. Cover the bowl with cling wrap and let it rise for about two hours.
4.Once the dough has doubled in size, mix the chopped apple, raisins, and currants into it. Heat up the oil in a deep saucepan. In the meantime, combine sugar and cinnamon in a bowl.
5.Spoon a tablespoon of the mixture into the hot oil and fry, flipping the doughnut once. Drain excess oil, coat the hot olliebollen in sugar-cinnamon mixture and serve warm.
