Ingredients

4 tomatoes , cored halved and seeded
6 garlic cloves , minced and divided
1 teaspoon fresh thyme leave , minced
1/2 teaspoon sugar

1 quart water
1/2 cup white wine vinegar
1/2 cup sugar

1 large onion , halved and sliced into 1/4 inch thick
1/2 teaspoon olive oil
olive oil , for poaching
2 bay leaves
1 1/2 lbs tuna fillets , cut into 4 equal pieces ( skinless )

Instructions

1.Preheat oven to 425°F
2.Toss together tomatoes, 3 minced garlic cloves, thyme leaves, sugar, salt and black pepper in a bowl. Spread the mixture evenly on a foil-lined baking sheet and drizzle with olive oil. Roast it for 25 minutes or until tomatoes are caramelized. Set aside
3.Combine water, white wine vinegar, sugar, sliced onion, 3 minced garlic cloves, salt and black pepper in a Dutch oven. Cook at medium-high heat and bring to a simmer.
4.Reduce heat to low and let it simmer for 5 minutes. Remove from the heat.
5.Add tuna, salt, black pepper, bay leaves and enough olive oil to cover the tuna in the mixture. Cook over low heat for 25 minutes until tuna is cooked through.
6.Serve the tuna with the roasted tomato sauce and sprinkle with chopped tarragon.
