Olive Garden Chicken Involtini is a spinoff of the classic Italian dish, involtini, which is a type of beef roll-up. This recipe features tender and juicy chicken breasts that are filled with a mixture of sun-dried tomatoes, pine nuts, spinach, and Fontina cheese. The breadcrumb crust ensures that each chicken roll-up is crispy on the outside while the filling inside remains moist and cheesy. This dish is a healthy and delicious way to enjoy the flavors of Italian cuisine without having to leave your home.

Instructions

1.Preheat the oven to 375°F.
2.In a bowl, mix together the sun-dried tomato, pine nuts or walnuts, frozen spinach, and Fontina cheese. Add salt and pepper to taste.
3.Butterfly each chicken breast, leaving the skin attached, and then pound them flat with a meat mallet.
4.Spoon the filling onto each chicken breast and roll up, tucking in the ends to prevent the filling from escaping.
5.Combine the breadcrumbs, melted butter, and parsley in a separate bowl. Roll each chicken roll-up in the breadcrumb mixture until covered.
6.Place the chicken in a baking dish and bake for 30-40 minutes until the internal temperature reaches 165°F.
7.Let the chicken rest for 5 minutes before slicing and serving.
