Ingredients

1 lb lean ground beef
1 package taco seasoning mix ( or my Taco Bell Taco Seasoning Mix ( Copycat ) )
1 can diced tomatoes and green chilies ( Ro-Tel )
1 can sliced black olives , reserving 12 slices
1 package extra-wide egg noodles
1 container sour cream
1 container small curd cottage cheese
1 can diced green chilies
1 tablespoon chives or 1 tablespoon snipped green onion top
1 package shredded Mexican blend cheese , divided
chives or snipped green onion top
sliced black olives ( reserved 12 slices )
Get ready for a fiesta with this Ole! Mexican Noodle Bake. With flavorful ingredients like taco seasoning, Ro-Tel, and black olives, this dish is sure to wow your taste buds. Instructions

1.Preheat oven to 350°F.
2.Cook noodles according to package instructions, drain and set aside.
3.In a skillet, cook ground beef over medium heat, breaking it up with a wooden spoon, until browned and fully cooked.
4.Add seasoning mix, diced tomatoes and green chilies, and sliced black olives and cook for 5 minutes.
5.In a medium bowl, mix together sour cream, cottage cheese, diced green chilies, chives or green onion tops, and half the shredded cheese.
6.In a 9x13-inch baking dish, layer noodles, then the meat mixture, then the cheese mixture, and repeat until all ingredients are used up, ending with a layer of cheese mixture on top.
7.Sprinkle the reserved black olive slices and remaining shredded cheese on top.
8.Bake for 30-35 minutes, until cheese is melted and bubbly. Let cool for a few minutes before serving.
