Ingredients

4 lbs medium fresh tomatoes
2 cups red peppers
1 cup red onion
2 1/2 cups diced red pear tomatoes ( Italian style )
2 -3 fresh garlic cloves
1 teaspoon italian seasoning
1/2 teaspoon maggi seasoning ( fondor )
1/4 teaspoon oregano
1 tablespoon sugar
1/2 cup italian mild light green banana pepper
1/2 cup chopped sweet onion
1/4 teaspoon orange rind
This Old World Tomato Marinara Sauce recipe is a fresh and healthy take on the beloved tomato-based sauce. Roasting the vegetables brings out their natural sweetness and deepens the flavor of the sauce. The addition of Italian seasoning and Maggi seasoning adds complexity and depth to the sauce, making it perfect for serving with your favorite pasta dish or as a dipping sauce for bread. Instructions

1.Preheat oven to 375 degrees F.
2.Cut fresh tomatoes and red peppers into quarters and place on a baking sheet.
3.Slice the red onion and add it to the baking sheet along with the diced red pear tomatoes and green banana peppers.
4.Generously drizzle olive oil over the vegetables and sprinkle with salt and pepper to taste.
5.Roast the vegetables for 30 minutes, stirring occasionally.
6.In the meantime, mince the garlic and chop the sweet onion.
7.In a pot or saucepan, sauté the garlic and sweet onion over medium heat with a tablespoon of olive oil until the onion is translucent.
8.Add the roasted vegetables along with the Italian seasoning, Maggi seasoning, oregano, and sugar to the pot or saucepan.
9.Grate the orange rind over the sauce and stir.
10.Let the sauce simmer for 10-15 minutes while stirring occasionally.
11.Blend the sauce with a handheld blender until desired consistency is achieved. Serve and enjoy!
