The pastry is easy to make, and you can easily customize the filling by adding nuts or dried fruits for a more festive touch.

Instructions

.Preheat oven to 350 degrees F (175 degrees C).
.Grind poppy seeds in a coffee grinder or food processor until finely ground; transfer to a bowl.
.Add 3/4 cup white sugar, 1 tablespoon melted butter, lemon juice, and hot milk; mix until filling is smooth and well-combined.
.Dissolve yeast in warm water. Stir in 2 tablespoons white sugar. Let stand until yeast is bubbly and frothy, about 10 minutes.
.Combine flour and salt in a large bowl. Cut in 1/4 cup butter with a pastry blender or two knives until mixture is crumbly.
.Make a well in the center of the flour mixture. Add yeast mixture, egg yolk and enough milk to make a soft dough.
.Knead dough on a floured surface until silky and smooth, about 10 minutes.
.Roll out dough into a rectangle about 1/4-inch thick. Spread poppy seed filling over the dough leaving about a 1/2-inch border on all sides.
.Brush edges of dough with reserved egg white. Fold in edges and roll up dough like a jellyroll starting with the long side. Moisten the edge and press to seal. Place on a greased baking sheet. Let rise until double in size, about 1 hour.
.Bake in the preheated oven until golden brown, 35 to 40 minutes.
