Ingredients

leftover whole cold roast turkey
4 pints water
1 bunch fresh thyme
2 onions , peeled and diced
2 large carrots , peeled and diced
1 small swede or 1 small rutabaga , peeled and diced
2 large potatoes , peeled and diced
6 ounces mixed dried pulses , such as split peas , dried beans , red lentils , green lentils , and brown lentils
2 ounces pearl barley
thyme
salt and pepper
1 large leek , cleaned and cut into small pieces ( optional )
1 stalk celery , cleaned and diced ( optional )
This soup is perfect for cold winter days when you need a warm and hearty meal. It is nutritious, filling, and easy to make. The use of leftover roast turkey means minimal effort is required to create a delicious and satisfying meal. The addition of mixed pulses and barley adds a lovely texture to the soup, while the fresh thyme provides a beautiful fragrance.

Instructions

1.In a stockpot, put your leftover whole cold roast turkey and cover it with water, then add a bunch of fresh thyme.
2.Bring the pot to a boil and then let it simmer for 1-2 hours or until the turkey gets tender.
3.Remove the turkey from the pot using tongs and let it cool enough to remove meat from the bones.
4.In the meantime, add in the diced onions, carrots, swede/rutabaga, diced potatoes, mixed dried pulses (split peas, dried beans, red lentils, green lentils, brown lentils), pearl barley, thyme, salt and pepper. Let it simmer for about an hour, or until everything is tender.
5.Once the turkey meat has cooled off, shred it into bite-sized pieces and add them back into the soup.
6.Add in the cut leek and celery, and let it simmer for another 15 minutes or until the vegetables are cooked through.
