Ingredients

2 lbs potatoes , scrubbed
2 lbs onions , chopped
5 tablespoons summer savory ( more if desired , I use about 10 )
1/2 cup butter
2 teaspoons salt ( or to taste )
1/2 teaspoon black pepper ( or to taste )
1/2 cup milk
8 slices bread , diced
2 tablespoons dark soya sauce ( optional , this was never in the original recipe but we like it better with it )

Instructions

1.Boil the potatoes and drain in a colander.
2.Place a large skillet over medium-high heat and cook onions until they are limp, which should take about 5 minutes.
3.Add summer savory, butter, salt and pepper to the skillet and stir.
4.Crumble the potatoes into the skillet and stir to mix ingredients.
5.Pour in milk and stir again until all ingredients are mixed.
6.Mix in the diced bread, making sure to coat it with the buttered mixture.
7.Use a spoon to press down the mixture until it is flat in the skillet.
8.Drizzle the soya sauce over the mixture.
9.Reduce heat to medium-low, cover skillet, and cook for about 20 minutes, or until bread is golden brown.
