6 eggs
3 zucchinis , shredded
1 zucchini , diced
1 teaspoon salt
1/2 teaspoon ground black pepper
3 tablespoons grated Parmesan cheese
1/4 cup chopped fresh basil
1 1/2 cups all-purpose flour
2 cups vegetable oil for frying

Instructions

1.In a large mixing bowl, beat eggs together.

4.Heat 2 cups of vegetable oil in a deep skillet over medium heat.
5.Drop spoonfuls of the zucchini batter into the hot oil and fry until golden brown on each side.
6.Remove from heat and place on a paper towel-lined plate to drain off excess oil.
