Ingredients

2 lbs unpared small white potatoes
1/4 lb sliced bacon
1/2 lb frankfurter ( sliced 3/8-inch thick at angle )
1/2 cup minced onion
1 1/2 teaspoons flour
1 tablespoon sugar
3 1/2 teaspoons salt
1/4 teaspoon pepper
1/3 cup vinegar
1/3 cup water
1/4 cup minced onion
2 tablespoons coarsely chopped green peppers
1 tablespoon snipped parsley
1 teaspoon celery seed
4 shelled hard-boiled eggs

Instructions

1.Scrub the potatoes and cut them into small chunks. Boil the potatoes until they are tender but not mushy. Drain and set aside.
2.In a large skillet, cook the bacon until crisp over medium heat. Remove the bacon and crumble when cool.
3.In the fat, cook the sliced frankfurters until browned. Remove from heat and set aside. Reserve the fat.
4.In 3 tablespoons of the bacon fat, cook 1/2 cup of minced onion over medium heat until tender.
5.Add flour, sugar, 2 1/2 teaspoons of salt, and 1/4 teaspoon of pepper. Gradually stir in vinegar and water.
6.Cook, stirring constantly until the mixture thickens and boils for one minute. Pour the hot mixture over the potatoes and stir.
7.Add the 1/4 cup minced onion, green peppers, parsley, celery seed, and the sliced frankfurters. Toss gently.
8.Cover and let stand at room temperature for one hour.
9.Slice the hard-boiled eggs and arrange them on top of the salad. Sprinkle with the crumbled bacon. Serve and enjoy!
