Ingredients

1 1/3 cups all-purpose flour
1 1/2 teaspoons pumpkin pie spice ( or make a mix of your favourite spices )
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsweetened applesauce
1/4 cup light molasses
1 large egg , lightly beaten
4 tablespoons margarine
1/2 cup packed dark brown sugar
2 teaspoons grated peeled fresh ginger
3 tablespoons finely chopped crystallized ginger
3/4 cup confectioners ' sugar
Old-Fashioned Gingerbread is a classic dessert that has been enjoyed for hundreds of years. This recipe adds a twist of crystallized ginger for extra flavour and texture. Instructions

1.Preheat the oven to 350°F (180°C). Grease an 8 inch (20cm) square baking pan and line with parchment paper.
2.In a medium bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt.
3.In a large bowl, beat the margarine and brown sugar together until light and fluffy.
4.Add in the egg and mix well.
5.Stir in the applesauce, molasses, and grated fresh ginger.
6.Gradually add in the dry ingredients, mixing until just combined.
7.Fold in the crystallized ginger.
8.Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean when inserted into the center.
9.Allow to cool before dusting with confectioners' sugar.
