Ingredients

6 sheets leaves gelatin
600 ml raspberry juice ( or red fruit juice of your choice )
60 g caster sugar
350 g mixed berries ( preferably strawberries , raspberries , blackcurrants and redcurrants . )
vanilla ice cream or cream

Instructions

1.Soak the gelatin in cold water for about 5 minutes or until soft.
2.In a medium saucepan, combine the raspberry juice and caster sugar. Heat over medium heat until sugar dissolves.
3.Remove the pan from the heat and stir in the soaked gelatin until completely dissolved.
4.Let the mixture cool for a few minutes.
5.Meanwhile, wash and hull the mixed berries. Cut strawberries into halves or quarters, depending on size. Place all the berries into 4 x 200ml jelly molds.
6.Pour the jelly mixture over the berries. Cover with cling film and chill in the fridge for at least 6 hours or until set.
7.Once set, remove the jelly from the molds by dipping them into hot water for a few seconds and turning them out onto serving plates.
8.Serve with vanilla ice cream or cream.
