1 egg white , only
1 ounce butter

Instructions

1.In a large mixing bowl, combine the minced lean pork, minced pork belly, breadcrumbs, grated onion, lemon rind, grated nutmeg, chopped parsley, dried herbs, black pepper, and salt to taste.
2.Mix in the beaten eggs thoroughly, and the flour to bind the mixture. Add extra flour if needed.
3.Beat the egg white only and add to the mixture.

5.Place the sausages in the pan and fry, turning occasionally for about 20-25 minutes or until cooked through.
